Creamy Chipotle Black Bean Dip

Classic “throw things in the blender and see what happens.” This turned out surprisingly good. We were heading to our friends’ house for a barbecue, and naturally I was excited to concoct things for it.
I was experimenting with making loaded potato skins for the first time, and thought I had better have a backup. You really can’t go wrong with chips and dip, and you can’t go wrong with a dip if everything that goes into it is delicious right???? One of these days I’m going to prove myself seriously wrong on that statement, and then the girl that hates to waste will be in for a treat.
There was a tiny bit leftover the next day. We had heated up soup for lunch and it was super bland. I poured it into the dip container and it became delicious. This would also be great on sandwiches.
- 1 can of black beans, rinsed and drained
- 1 ginormous garlic clove or 2 regular sized ones
- 1-2 chipotle peppers depending on how spicy you like it
- handful of cilantro
- 4 oz light cream cheese
Put everything into your food processor and blend away. Enjoy.
