Brown Butter Blueberry Banana Bread

How’s that for alliteration? And this post is brought to you by the letter…
Like me, Andrew gets hungry in between meals at work. Before he had a wife, he would just stay hungry until the next meal. But now I get to experiment with portable snacks that provide some nutrition as well (okay, and the occasional 1.5 sticks of butter) and he gets to experiment with the joys of snacktime.
This bread is really moist, due to the fruit and yogurt in it. It’s also filling because of the oats and flaxseeds. So far, I’ve only tasted it hot out of the oven but it was delicious. And I’m not normally a banana bread person.
This is adapted from Joy the Baker’s Brown Butter Strawberry Banana Bread. I changed up the grains and stawberries; the rest is pretty much the same. I’m sure it’s delicious with strawberries too but a) I only had blueberries on hand and b) The alliterative title would have been interrupted by that lone “S”.
Ingredients
6 ounces unsalted butter, melted and browned to just over 1/2 cup of butter
1 1/2 cups flour (I used white whole wheat)
1/2 cup oats
1 tablespoon flaxseeds (optional)
3/4 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
2 large eggs
1 teaspoon pure vanilla extract
1/4 cup plain yogurt or buttermilk
1 to 1 1/4 cup mashed bananas (about 2 large mashed bananas or 3 medium)
1/2 cup blueberries
Other: Loaf Pan (I used 8.5 x 4.5; the original recipe called for 9×5. I’m sure both work fine)
Recipe
Grease and flour your pan, set aside, and preheat your oven to 350°.

Melt the butter in a saucepan or skillet on medium-low heat. You can break it up into smaller pieces as it’s melting so it cooks more evenly. It’ll get foamy and start bubbling/crackling as it melts. Swirl it around in the pan as it cooks. When it starts to smell nuttier and turns browner pour it into a small bowl to cool. If you leave it in the pan, it can burn.

Whisk together the above ingredients in a large bowl. This will be the bowl that everything else gets added to, so use your bigger bowl for this step. Make sure you break up all the clumps of brown sugar, if it is clumpy.
{eggs, yogurt/buttermilk, vanilla, bananas}
Whisk together the eggs, yogurt, and vanilla in a medium bowl. Add the bananas and whisk them in. If your butter has cooled, add it.
Pour the wet ingredients into the dry bowl and fold everything together. Add your blueberries and fold again. Pour everything in the pan and fight over who gets to lick the spoon/bowl. Bake for about 50 minutes, or until a tester comes out clean. Let it cool in the pan for about 15 minutes until removing it and placing the loaf on a cooling rack to finish cooling.
